Rum with Biscoff Cookie Butter

FLAVOUR
For this scoop we used Rexford Rum from @newwavedistilling in Yarrow, crafted entirely from local honey! Lightly caramelized and barrel-aged, it adds warm, rich depth to our ice cream base.
Swirled throughout is a decadent cookie butter made from real Biscoff cookies, ground to a fine powder and blended into a smooth, silky butter. The flavour is nostalgic and indulgent—the perfect mix of gingerbread and caramelized sugar!
