Sticky Toffee Pudding is a classic British dessert - a moist sponge cake made with finely chopped dates, smothered in a toffee sauce and more often then not, served up with a scoop of ice cream.
The dates give it depth rather than just being sweet for the sake of it, while homemade toffee sauce soaks into the cake, making it insanely moist, and rich.
For the Banter version, we incorporated dates, molasses and vanilla beans into our ice cream base, giving it a light toffee flavour. Then we churn in chunks of homemade sticky toffee pudding cake bites (say that 10 times fast) as well as a smooth toffee swirl for the ultimate desert a-la-mode!
